Widely used in Spanish and Mexican cuisine. Just add 3 tbsp plus 1 tsp of seasoning to 1 pound of ground pork. Stuff into casings or leave loose. For Mexican chorizo use fresh pork, for Spanish use smoked pork. Chorizo makes a tasty addition to casseroles, stews, soups and enchiladas. Casings should be removed before cooking.
